Ying Yang Beans

This bean is the one that cemented my love of interesting beans to grow! 

Ying yang (Phaseolus Vulgaris) is a thick skinned flat green bean on the bush and can be eaten as a young pod but becomes leathery as it ages. Ying Yangs true beauty is really within when you open the dried pod reveal the stunning black and white beans. The dried beans when cooked have a silky smooth texture and mild flavor making them very adaptable. 

Also knowns as Orca Bean and most commonly Calypso Bean because of its Caribbean origins. Once favoured in the "three sisters" system (beans, corn and squash) by the Abenaki Tribe of the Champlain region in the USA. Swells to twice its size when cooked.
