(Brassica napus var. napobrassicas)
Swede ‘Aspen’. Often called the "King of Root Vegetables" in heritage circles, this variety is celebrated for its reliable yields and exceptional culinary versatility. Unlike modern supermarket counterparts, ‘Aspen’ develops a refined, smooth texture and a complex sweetness that only truly shines when grown in the home garden.
This variety produces uniform, globe-shaped roots with a classic purple crown and creamy-white flesh. It is particularly valued by those who practice "slow living" and seasonal eating, as it is one of the most dependable storage crops—staying firm and flavourful in a cool, dark spot for months after harvest. Whether mashed with plenty of butter, roasted until caramelised, or added to hearty farmhouse stews, ‘Aspen’ is a winter essential.
Frost-Enhanced Flavour: The starches in the root convert to sugars after the first few frosts, resulting in a remarkably sweet, nutty taste.
Exceptional Storage: A champion "keeper" crop that helps provide homegrown food well into the hungry gaps of late winter.
Uniform & Reliable: Selected for its consistent shape and high resistance to splitting, even in variable weather.
Culinary Versatility: Holds its shape beautifully in slow-cooked dishes but mashes to a silky, golden consistency.
Nutrient-Rich: A fantastic source of Vitamin C, fibre, and potassium during the colder months.
Scientific Name: Brassica napus var. napobrassica 'Aspen'
Sowing Season: Late Spring to early Autumn (Best timed to mature during the onset of cold weather).
Position: Full sun.
Sowing Depth: 1cm deep.
Spacing: 20–25cm apart in rows 40cm apart.
Germination: 7–10 days.
Harvest: 12–16 weeks.
Soil Tip: Swedes prefer a well-worked, crumbly soil that is free from fresh manure (which can cause the roots to fork). Ensure consistent moisture to keep the roots tender and prevent them from becoming "woody."
